Day 7 of Veganuary and this week I’m using the easy plan from this book. Each recipe has been super easy to make and delicious! Loaded sweet potato, Nachos and the soups have been my fav’s. There are plenty of recipes to choose from and the shopping lists are helpful. I have done Veganuary before but I have to say that with these recipes it has been so much easier to stick to this year, I don’t feel like I’m missing out on anything and so much healthier than buying processed meat substitutes.
